At NVC, we have been making tonnes of cupcakes recently, so we have a few more cupcake recipes to come soon. In other news, we have been on the Anything Goes radio show talking about our upcoming art shows (we are about an hour in).
Ingredients for the sponge mixture: 100g Flour, 100g vegan margarine, 100g Caster Sugar, 2 heaped spoonfuls of soya flour, 1 heaped spoonful of cocoa powder, 100ml water
Ingredients for Icing: about 25g dark orangey chocolate (ASDA do some vegan chocolate orange buttons – alternatively use normal dark chocolate and add a drop of orange extract), 100g of icing sugar, 100g vegan margarine
Pre-heat oven to 180 degrees. Meanwhile, whisk the sugar and the marg together until creamy, add the soy flour and 50ml of water and whisk until smooth. Add the flour and the 50ml water and the cocoa and mix until smooth. Scoop into cupcake cases and cook for 30-40 minutes until they are soft and a knife runs clear.
To make the icing, blend the marg, icing sugar, cocoa and the chocolate together until smooth – use to decorate when the cakes are cooled. Enjoy!!
