Sweetcorn Fritters

These little fried cakes make the most delicious starter, we served them at a dinner party last week where they went down a storm. These quantities make 15-20 fritters, enough for about 6 people, or 2 very greedy people. Dip in sweet chilli sauce or any other yummy dip you have around.

Ingredients: 200g self raising flour, 2 tablespoons soy flour, 2 tablespoons of water, 300ml soy milk, 1 can of sweetcorn, 6 spring onions (chopped), salt and pepper to taste, 1 tsp chilli powder, vegetable oil to fry.

Mix together all the ingredients and fry in about 2cm of hot oil. They take about 2 mins on each side, or until well browned and delicious smelling.
