Greta brought this salsa back from her mum’s as leftovers from when her mum was entertaining. We were pretty surprised it ended up as leftovers in the first place – it’s pretty scrumptious. Jess started to experiment to try and guess the recipe that Greta’s mum had used and our lovely Mango Salsa was born.
Ingredients: 2 mangos, 1 large tomato, 1/2 small red onion, 4 spring onions, 1-2 cloves garlic (to taste), drizzle of olive oil, drizzle of lemon juice.
Method:
- Peel, stone and dice the mango.
- Dice the tomato, trying to remove as many seeds as possible
- Finely chop the red onion, garlic and spring onions
- Mix all the ingredients together. Add lemon juice and olive oil to taste
